After tiring of protein bars at the supermarket with all kinds of additives, this simple no-bake recipe was a win. You can make it to your taste and I can assure you, it's a great in-between meal option. They can also be frozen so you can eat whenever you like!
Ingredients:
- 1 cup oat flour (run old fashioned oats in the blender to make a flour)
- 1/2 cup vanilla protein powder
- 2 tablespoons flaxseed
- 2 tablespoons sunflower seeds
- 1/4 teaspoon salt
- 1/2 cup natural salted peanut butter
- 1/4 cup pure maple syrup Slippery Slope Maple Syrup
- 1 teaspoon pure vanilla extract
- 1/4 cup of mini chocolate chips (optional)
- Flakey sea salt (optional)
Method
Line a 9X5 inch loaf pan with parchment paper
Combine oat flour, protein powder, flaxseed, sunflower seeds and salt in a bowl
Add peanut butter, maple syrup, vanilla, and chocolate chips (if using). Mix well (may help to use your hands!). Add more maple syrup if it seems too dry.
Press this mixture into the prepared pan until it’s smooth and flat.
Sprinkle with flakey sea salt if using.
Freeze for 30 minutes or so before cutting into bars or squares (your choice…)
Notes from Slippery Slope Maple- If you don’t like sunflower seeds you don’t have to add them. You could also use chia seeds if you prefer. As an alternative to the chocolate chips, you could add golden raisins or dried cranberries.
